... mainly Boeing 787s. At 14:55 he explains the whole fuel switch system in great detail. It does not involve any software control at all: it's a direct electrical connection to a relay which controls power to an electro-mechanical valve that controls the fuel supply to the engines, so it's completely independent from the FADEC system in the engine. I also saw another description on the Mover and Gonky show, see below, of the actual microswitch which is multi-pole, so a separate connection goes to the flight data recorder. It does seem like sabotage would be very difficult to do like this.
